We produce our balsamic vinegar by natural fermentation of good quality vinegar, which is mixed with concentrated grape must. We use grape must for its inherently sweet taste, as well as its rich content of antioxidants and nutrients. To remove all impurities from our balsamic vinegar without altering its composition, we use crossflow filters. This filtration process replaces pasteurization, which impairs the flavor and nutrients of the balsamic vinegar. With this method, we achieve a balanced sweet and sour taste, free from added sugar, gluten, and artificial interventions. It has a deep dark color reminiscent of mahogany and ebony.

The range would not be complete without balsamic apple cider vinegar.
