"Tsakistes" Olives are another common type of olive that can be found in Greece. The word “tsakistes” actually means, “cracked,” a name given to the product due to its wrinkled appearance. They’re grown primarily in the Attica region of Greece, and collected green, before they are fully ripped. Once they’re picked, they’re cured and marinated with fresh lemon, peppers and herbs.
