Green Chalkidiki Olives are grown exclusively in Northern Greece, and specifically in the area of Chalkidiki. These fresh olives come in sizes from Large to Atlas, have an oval shape, and their color ranges from bright to pale green. They predominate over the other types of green olives in quality and taste, harvested while still young in September-October, and processed through brine curing, to remove bitterness and give them a firmer meat texture. These olives have a crunchy flesh, and a soft flavor, with some tartness and a slightly peppery taste.
